The Maharashtrian hospitality is legendary. The cuisine has subtle variety and strong flavours and varies from region to region. In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! Ingredients for Milk Poli Recipe

  • Milk 2 cups

  • Semolina 1 a pinch

  • Ghee 4 teaspoons

  • Milk 4 cups

  • Sugar 1 1/2 cups

  • Green cardamom powder 1/2 teaspoon

  • Saffron (kesar) 4-5 strands


Step 1

Knead the above ingredients into a firm dough. Roll out into thin puris and deep fry in ghee. Cool and store in airtight container. Boil milk on low heat. When reduced, add sugar and continue to boil slowly.

Step 2

Remove the milk from heat. Add the puris one by one and let it soak well. Serve in individual bowls, as well-soaked puris tend to stick together. Serve chilled.
