How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Mint And Peas Pulao Recipe

  • Rice 1 1/2 cups

  • Green Peas to taste

  • Ghee 3 tablespoons

  • Cumin seeds 1 teaspoon

  • Cloves 3-4

  • Cinnamon 2 one-inch

  • Onion sliced 1 large

  • Green peas blanched 1/2 cup

  • Fresh mint leaves 1/2 bunch

  • Fresh coconut scraped 1/2 cup

Method

Step 1

Pick, wash and soak rice in three cups of water for ten to fifteen minutes. Drain and cook rice in four to five cups of salted boiling water till done.

Step 2

Drain again and spread on a large plate to cool. Heat ghee in a kadai and add cumin seeds, cloves and cinnamon. When they begin to change colour, add onions and sauté on medium heat for three to four minutes till light pink.

Step 3

Add rice, green peas, fresh mint eaves and coconut and toss to mix well stirring and tossing continuously. Adjust seasoning and continue to sauté for another minute. Serve hot.
