Missal Casserole

Oh what a fantastic fusion this – matki missal topped with farsan, baguette and cheese and baked. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Missal Casserole

  • 1 cup Matki sprouts boiled
  • 2 medium Onions finely chopped
  • 1-2 Green chillies finely chopped
  • 1 tablespoon Ginger-garlic paste
  • 1 cup Fresh coconut grated
  • 3-4 tablespoons Oil
  • 1 medium Onion halved and sliced
  • 1 tablespoon Red chilli powder
  • 1½ teaspoons Garam masala powder
  • 1 large Potato boiled, peeled and cut into small cubes
  • to taste Salt
  • 1¼ tablespoons Fresh coriander leaves chopped
  • For topping Farsan
  • ½ Baguette cut into cubes
  • 2-3 tablespoons Mozzarella cheese grated
  • 2-3 tablespoons Processed cheese grated

Method

  1. Blend together chopped onion, green chillies, ginger-garlic paste and coconut with sufficient water to make a semi-thick and smooth paste.
  2. Heat oil in a non-stick pan. Add sliced onion and sauté for 1-2 minutes. Add coconut paste, mix well and cook for 2-3 minutes.
  3. Add chilli powder and garam masala powder mix well, cover and cook till the oil leaves the sides of the pan.
  4. Preheat oven to 180ºC.
  5. Add potatoes and matki to the pan and mix well. Add ¼ cup water, mix and cook for 2-3 minutes.
  6. Add salt, mix well, cover and cook till the mixture turns semi-dry.
  7. Transfer the mixture into an oval glass baking dish and spread evenly. Sprinkle 1 tablespoon coriander leaves and top with lots of farsan. Arrange baguette cubes on top and press a little.
  8. Sprinkle mozzarella cheese, processed cheese and remaining coriander leaves, place the dish in the preheated oven and bake till the cheese melts.
  9. Serve hot.
