Ingredients for Mixed Greens Salad with Orange and Poppy Seed Dres Recipe

  • Iceberg lettuce leaves roughly torn 6-8

  • Romaine lettuce roughly torn 4-6

  • Baby spinach leaves 8-10

  • Orange juice 1 cup

  • Orange segments 5-7

  • Poppy seeds (khuskhus/posto) 1 tablespoon

  • Honey ½ tablespoon

  • Olive oil 1 tablespoon

  • Cranberries dried 10-12

  • Black olives pitted and halved 6-8

  • Almonds halved 8-10

  • Salt to taste

  • Crushed black peppercorns to taste

Method

Step 1

To make the dressing, heat orange juice in a non-stick pan and cook till reduced. Switch off heat, add honey and mix. Set aside to cool.

Step 2

Grind poppy seeds into fine powder. Add reduced orange juice and olive oil and grind again to make a smooth mixture.Transfer into a small jar.

Step 3

Put iceberg lettuce, Romaine lettuce, spinach, cranberries, olives, almonds and orange segments in a bowl and toss well.

Step 4

Put the salad on a serving platter.

Step 5

Add salt and crushed peppercorns to the dressing, cover and shake well.

Step 6

Drizzle the dressing over the salad and serve immediately.
