Mixed Vegetable Salad with Lemon Coriander Vinaigrette

Ingredients 

  • 1 medium green capsicum, cut into thin strips
  • 2 medium tomatoes, seeded and cut into thin strips
  • 2 medium onions, sliced
  • 1 small head iceberg lettuce
  • 1/3 cup crushed roasted peanuts

For Dressing

  • 2 tablespoons lemon juice
  • 8-10 fresh coriander stems
  • 6 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon crushed black peppercorns
  • 2 tablespoons chopped fresh coriander leaves 
  • Salt to taste

Method

  1. Place capsicum and tomatoes in a bowl and add onion, torn iceberg lettuce leaves.
  2. To make the dressing, roughly chop coriander stems and place in another bowl. Add olive oil, honey, crushed peppercorns, coriander leaves and salt and mix well.
  3. Add dressing to the vegetables and mix well.
  4. Garnish with crushed peanuts and serve chilled.
