Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Moong Dal Halwa Premix - SK Khazana Recipe

  • Split skinless green gram (moong dal) 3 cups

  • Ghee 1/2 cup

  • Almonds chopped 6 tablespoons

  • Cashew Nuts chopped 6 tablespoons

  • Milk powder 1/2 cup

  • Green cardamom powder 1/2 teaspoon

  • Powdered sugsar 1 1/2 cup

  • Saffron a large pinch off

  • Pistachios slivered for garnish

Method

Step 1

Grind the moong dal to a coarse powder.

Step 2

Heat a non-stick pan, add the coarse powder and roast till fragrant and golden brown. Make a well in the center and add ghee and add almond and cashew nuts and roast for a few seconds. Mix well and take the pan off the heat.

Step 3

Transfer into a bowl and allow to cool completely. Add milk powder, green cardamom powder and powdered sugar. Add saffron and mix well.

Step 4

Transfer into an airtight jar and use up to 15 days.

Step 5

For making the moong dal, take ½ cup premix in a microwave safe bowl, add ¾ cup hot water, cover with a lid and microwave on high for 2 minutes, mix and microwave again for 2-3 minutes.

Step 6

Garnish with pistachios and serve.
