  • 6 Button mushrooms sliced
  • Babycorns
  • 8-10 Babycorns halved and boiled
  • 150 grams Paneer (cottage cheese) cut into 1½ inch cubes
  • 10 Baby potatoes parboiled
  • 10-15 Pearl onions
  • 3 tablespoons Oil
  • 2 large Onions chopped
  • 1 1/2 inch piece Ginger chopped
  • 3-4 Green chillies chopped
  • 1/2 teaspoon Coriander powder
  • 1/2 teaspoon Red chilli powder
  • 4 teaspoons Garam masala powder
  • to taste Salt
  • 8 tablespoons Tomato puree
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh coriander leaves chopped

Method

  1. Sauté mushrooms, baby corns, paneer, baby potatoes and pearl onions separately in one teaspoon of oil each, sprinkling a little salt as you sauté.
  2. Drain and set aside.
  3. Heat three tablespoons of oil on a tawa; add onions and sauté till brown. Add ginger and continue to sauté. Add a little water and cook for a few minutes.
  4. Place the sautéed paneer and vegetables around the edge of the tawa. Add green chillies to the onion mixture and continue to sauté.
  5. Draw the vegetables and paneer into the masala at the centre of the tawa. Add coriander powder, red chilli powder, garam masala powder, salt, tomato purée and half a cup of water and mix well. Cook for three to four minutes , add lemon juice and mix.
  6. Garnish with coriander leaves and serve hot.
