Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mushroom Balchao Recipe

  • Fresh Button Mushrooms quartered 600 grams

  • Dried Red chillies 10-12

  • Garlic 8-10 cloves

  • Ginger 1 inch piece

  • Cumin seeds 1 teaspoon

  • Cloves 7-8

  • Mustard seeds 1 teaspoon

  • Cinnamon 1 inch piece

  • Salt to taste

  • Malt vinegar 1/2 cup

  • Oil 2 tablespoons

  • Onion chopped 2 medium

  • Tomato chopped 2 medium

  • Tomato puree 3/4 cup

  • Sugar 1 tablespoon

Method

Step 1

Grind the red chillies, garlic, ginger, cumin seeds, cloves, mustard seeds, cinnamon and salt with one-fourth cup of malt vinegar to a fine paste.

Step 2

Heat the oil in a kadai; add the onions and sauté till light brown. Add the tomatoes, mix well and cook for five minutes, stirring continuously. Add the mushrooms, tomato purée and ground masala and cook for three or four minutes.

Step 3

Add the sugar, more salt if necessary and mix well. Add the remaining malt vinegar and cook for five to seven minutes. Serve.
