Ingredients list for Mushroom Cheesy Stuffed Eggs
- 6 large Boiled eggs finely chopped
- 2 tablespoons Button mushrooms
- 4 Hard boiled eggs peeled, halved and yolks separated
- 2 teaspoons Oil
- 4 teaspoons Garlic chopped
- 1 medium Onion finely chopped
- to taste Salt
- to taste Black peppercorns crushed
- to taste Red chillies crushed
- for garnishing Fresh parsley sprigs
Method
- Heat oil in a non-stick pan, add garlic and sauté for a minute.
- Add onion and sauté till it turns golden. Add mushrooms, salt, crushed peppercorns and sauté on high heat for four to five minutes or till the mushrooms are cooked.
- Transfer the cooked mushroom mixture into a bowl. Add cheese spread, egg yolks and crushed red chillies and mix well.
- Spoon the prepared mixture into the halved eggs. Garnish with parsley sprigs and serve warm.
