Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mushrooms In Coriander Sauce Recipe

  • Mushrooms 250 grams

  • Coriander 1 small bunch

  • Garlic 10 cloves

  • Green chillies 4

  • Oil 2 tablespoons

  • Salt to taste

  • Fresh cream 1/4 cup

  • Black pepper powder crushed for garnish

Method

Step 1

Grind garlic, coriander leaves and green chillies to a fine paste.

Step 2

Heat oil in a non-stick pan. Add paste and cook for two to three minutes.

Step 3

Add mushrooms and salt and saute for a two minutes. Add fresh cream and saute for a minute.

Step 4

Add a cup of water and cook till the gravy thickens. Sprinkle with coarsely ground black peppercorns. Serve hot with rice or paranthas.
