Olan

Olan is a dish that is part of the Kerala cuisine of the state of Kerala in South India. It is a light and subtle-flavored dish prepared with white gourd or ash-gourd, and pumpkin. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 cup peeled and cubed red pumpkin 
  • 1 cup peeled and cubed ash gourd
  • 6 green chillies
  • Salt to taste
  • 2 tablespoons coconut oil
  • 10-12 curry leaves

Method

  1. Wash and slit the green chillies and keep aside. Boil the vegetables in 1 cup water with salt and slit green chilies. Stir frequently till the vegetables are soft and completely cooked.
  2. Mash the vegetables lightly with a ladle, pour the raw coconut oil, mix and add the curry leaves. Adjust salt to taste and serve.
