Ingredients for Onion Leeks Masala Rosti Recipe

  • Onions chopped 2 medium

  • Leeks chopped 1/4 cup

  • Butter 2 tablespoons

  • Potatoes non starchy, parboiled, peeled and grated 4-5

  • Red chilli powder 1 1/4 teaspoons

  • Chaat masala 1 teaspoon

  • Green chillies chopped 1 teaspoon

  • Salt to taste

  • Black peppercorns crushed to taste

  • Processed cheese grated for garnishing

  • Spring onion greens chopped for garnishing

Method

Step 1

Heat butter in a non-stick pan, add onions and sauté till translucent. Add leeks to the pan, mix well and sauté for a minute. Switch off heat and transfer the mixture into a bowl and cool for fifteen to twenty minutes.

Step 2

Put potatoes into another bowl. Add red chilli powder, chaat masala, green chillies, salt, crushed peppercorns.

Step 3

Add the onion-leek mixture along with salt and mix well.

Step 4

Heat a non-stick pan.

Step 5

Divide the potato mixture into four equal portions. Place a portion on the pan and spread into a thin disc. Cook till the underside is golden. Flip and cook till the other side is golden. Make the remaining rostis similarly.

Step 6

Place each rosti on a serving dish. Garnish with cheese and spring onion greens and serve hot.
