Panzanella Bread and Tomato Salad By Sanjeev Kapoor 15 Feb 2016 in Recipes Course New Update Main Ingredients White Bread, Tomatoes Cuisine Italian Course Salads Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Panzanella 5-6 White Bread 1 inch pieces stale to taste Tomatoes 5 medium Tomato seeded and cut into 1/2 inch cubes 1 medium Onion,chopped 1 large Cucumber seeded and cut into 1/2 inch cubes 1 bunch Basil leaves chopped Dressing 1/4 cup Salad oil 1 tablespoon Vinegar to taste Salt 1/2 teaspoon Black pepper powder 1/2 tablespoon Mixed herbs 1/2 teaspoon Mustard paste Method Add a pinch of salt to two cups of water, dip the bread pieces in it and remove. Press the bread to squeeze out the water. In a salad bowl, mix together the bread, tomatoes, onion, cucumber and the fresh basil and chill in a refrigerator. To make the dressing, mix together salad oil, vinegar, salt, pepper powder, dried herbs and mustard paste. Just before serving, remove the salad bowl from the refrigerator, add the dressing and mix thoroughly. Serve chilled.
