Pepper Slices With Cream Cheese

Stuffed capsicums filled with a creamy pineapple cheese mixture, garnished with chopped almonds, and served chilled on a bed of lettuce. This is a Sanjeev Kapoor exclusive recipe.

Method

  1. Cut a piece from the stem end of the capsicums.
  2. Remove the seeds and the membranes.
  3. Beat the cream cheese till smooth; add the pineapple, mayonnaise, salt, crushed peppercorns and almonds.
  4. Stuff the capsicums with the cheese mixture, cover and chill for at least twelve hours.
  5. Slice each capsicum with a hot, sharp knife and place them on ice.
  6. Serve in a platter on a bed of lettuce leaves.
