Poached Egg and Avocado Burger Keep yourself full until lunchtime with this healthy breakfast boost. Delicious avocado serves as a butter alternative and goes well with a runny poached egg. By Sanjeev Kapoor 18 Mar 2021 in Recipes Course New Update Main Ingredients Eggs, Medium avocado Cuisine Fusion Course Snacks and Starters Prep Time 11-15 minutes Cook time 6-10 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Poached Egg and Avocado Burger 4 Eggs 1 Medium avocado 4 Burger buns to taste Salt as required Vinegar 1 Lemon juice extracted as required Iceberg lettuce leaves as required Mayonnaise to taste Black pepper powder to serve Tomato slices Method To poach an egg boil sufficient water in a non-stick pan, break egg into a silicon mould, sprinkle salt and ¼ teaspoon vinegar over it, place the mould in the boiling water and let the egg poach. Alternately, boil sufficient water in a non-stick pan, add vinegar and mix. Break an egg in a silicon mould, sprinkle some salt over it, slide the egg slowly into the pan, cover and let it poach. Similarly poach the remaining 2 eggs. Halve the avocado, peel and cut into thin slices. Place the slices on a plate, squeeze the juice of a lemon over the slices and sprinkle some salt. Halve the burger buns horizontally. Tear lettuce leaves and place some on the base half of each bun. Drizzle some mayonnaise over and place some avocado slices. Top with 1 poached egg, sprinkle some pepper powder over the egg, place some avocado slices and sprinkle salt over them.
