Ingredients list for Poached Fried Eggs-Cook Smart
- 5 Eggs
 - 2 Medium onions
 - 2 teaspoon to shallow fry Oil
 - 2 Spicy chicken sausages
 - 1 Green capsicum seeded and cut into strips
 - 1 tablespoon Sweet red chilli sauce
 - to taste Salt
 - 1 teaspoon Vinegar
 - 1 1/2 cups Fresh breadcrumbs
 - to taste Black peppercorns crushed
 - 4-5 Iceberg lettuce leaves
 
Method
- Heat 2 teaspoons oil in a non-stick pan, add onions and saute well.
 - Slice sausages.
 - Add capsicum strips and sausages to the pan and toss. Add chilli sauce and salt and toss well.
 - Heat sufficient water in a deep non-stick pan.
 - Transfer sausage mixture into a bowl and cool down to room temperature.
 - Break 1 egg into a bowl. When the water in the pan comes to a boil, add salt and vinegar. Whisk the boiling water slightly so that it moves in circular fashion. Slide the egg immediately into it.
 - Let it poach for 3-4 minutes. Gently remove the egg from the water with a slotted spoon and keep on a plate to cool. Remember not to cook the egg fully because the yolk should remain a little runny. Poach 3 more eggs similarly. Chill the eggs in the refrigerator.
 - Break remaining egg into a plate, add salt and mix well.
 - Heat sufficient oil in another non-stick pan.
 - Spread breadcrumbs on a plate. Add salt and mix.
 - Add crushed peppercorns to the egg and mix well. Dip poached eggs in it and coat with the breadcrumbs gently without pressing the egg.
 - Gently place the coated poached eggs on the pan and shallow-fry, turning sides gently, till golden and crisp on both the sides.
 - Tear lettuce leaves and place on a serving dish. Put some of the cooked sausage mixture on it, place the poached fried eggs on it and top with remaining sausage mixture.
 - Serve immediately.
