How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Poha Laddoo - SK Khazana Recipe

  • Pressed rice (poha) 1 cup

  • Jaggery chopped 1/2 cup

  • Almonds chopped 2 tablespoons

  • Cashewnuts chopped 2 tablespoons

  • Ghee melted 1/2 cup

  • Green cardamom powder 1/2 teaspoon

  • Almonds slivers to garnish


Step 1

Heat a non-stick pan, add pressed rice and roast until light golden brown. Allow it cool, transfer into a grinder jar and grind into a fine powder.

Step 2

Transfer the powdered pressed rice into a bowl, add jaggery, almonds, cashewnuts and hot melted ghee and mix well.

Step 3

Add green cardamom powder and mix well. Divide the mixture into equal portions and shape them into laddoos.

Step 4

Garnish each laddoo with an almond sliver and serve.
