Ingredients for Pomegranate and Kiwi Salad Recipe

  • Fresh pomegranate kernels (taaze anardane) ¼ cup

  • Kiwis 2 medium

  • Romaine lettuce leaves 5-7

  • Iceberg lettuce leaves 8-10

  • Lolo rosso lettuce leaves 5-7

  • Cottage cheese (paneer) 50 grams

  • For Dressing

  • Garlic cloves 5-7

  • Mustard seeds 1 teaspoon

  • Fresh mint leaves 8-10

  • Orange squash 1 tablespoon

  • Juice of ½ lemon

  • Extra virgin olive oil 2 tablespoons

  • Salt to taste

  • Black pepper powder to taste

Method

Step 1

Peel and roughly chop kiwis and put into a bowl.

Step 2

Roughly tear all the lettuce leaves and add to the bowl.

Step 3

To make dressing, grind together garlic, mustard seeds, mint leaves, orange squash, lemon juice, extra virgin olive oil, salt and pepper powder till smooth.

Step 4

Roughly crumble cottage cheese and add to the bowl with pomegranate kernels and dressing and mix well.

Step 5

Transfer the salad onto a serving plate and serve immediately.
