How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Puli Satham Recipe

  • Rice Flour 1 cup

  • Tamarind Pulp 3 tablespoons

  • Water 2 1/2 cups

  • Whole dry red chillies 2

  • Onion 1 large

  • Ghee 1 tablespoon

  • Mustard seeds 1 teaspoon

  • Fenugreek seeds (methi dana) 1 teaspoon

  • Tomato puree 1 teaspoon

  • Salt to taste

Method

Step 1

Bring the water to boil in a pan, meanwhile wash the rice thoroughly and drain. When the water starts to boil, add the rice and salt to taste. Cook for 10 –15 minutes or till the rice is done, drain off extra water if any.

Step 2

Put it back over the heat and cook for 3-5 minutes. Halve the dried red chillies and discard the seeds. Peel and chop the onion. Heat ghee in thick bottom pan and fry the onion till golden brown, then add mustard seeds.

Step 3

When they start to crackle add the chillies, the fenugreek seeds, the tamarind pulp and the tomato puree. Bring top boil and then stir in the cooked rice gently. Serve hot.
