Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Punjabi Anda Bhurji Recipe

  • Eggs 8

  • Oil 4 tablespoons

  • Onions roughly chopped 4 medium

  • Ginger grated ½ inch piece

  • Green chillies chopped 3

  • Tomatoes roughly chopped 4 medium

  • Salt to taste

  • Fresh coriander leaves 4 tablespoons


Step 1

Heat oil in a non-stick pan. Add onions and sauté till light brown. Add ginger, green chillies and tomatoes and continue to sauté.

Step 2

Break eggs into a bowl and add salt and whisk lightly.

Step 3

Pour the eggs mixture into the pan and cook stirring continuously till almost dry.

Step 4

Lower the heat and sauté till dry. Add coriander leaves and serve hot with ajwain flavoured paranthas or bread.
