Ingredients for Puri Bhaji Spring Roll Recipe

  • Whole wheat flour (atta) dough as required

  • Potatoes boiled, peeled and mashed 3-4 medium

  • Oil 1 tablespoon + foe greasing + deep frying

  • Curry leaves 5-7

  • Mustard seeds 1 teaspoon

  • Cumin seeds 1 teaspoon

  • Green chillies finely chopped 1-2

  • Turmeric powder ¼ teaspoon

  • Salt to taste

  • Freshly chopped coriander leaves 1 tablespoon

Method

Step 1

Heat oil in a non-stick pan. Add curry leaves, mustard seeds and cumin seeds and let mustard seeds splutter. Add green chillies and turmeric powder and sauté for 30 seconds.

Step 2

Add potatoes, mix and cook for 1 minute. Add salt and mix. Add coriander leaves and mix well. Remove from heat and cool.

Step 3

Divide the dough into equal portions and shape them into balls.

Step 4

Grease the worktop with some oil, place each ball and roll out to a thin disc.

Step 5

Divide the potato mixture into equal portions and put a portion of potato mixture in the centre of each disc, fold in the four sides and roll.

Step 6

Heat sufficient oil in a kadai. Deep-fry each spring roll in hot oil till golden and crisp. Drain on absorbent paper.

Step 7

Serve hot.
