Ingredients list for Rajasthani Kadhi-SK Khazana

  • 1 1/2 cups Sour yogurt
  • 1/4 cup Gram flour (besan)
  • 1 tablespoon Ginger-garlic-green chilli paste
  • to taste Salt
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 3 tablespoons Ghee
  • 1 inch Cinnamon
  • 3-4 Cloves
  • 1 Bay leaf
  • 6-8 Black peppercorns
  • 1/2 teaspoon Fenugreek seeds (methi dana)
  • 1 teaspoon Cumin seeds
  • a large pi Asafoetida (hing)
  • 1 tablespoon Ginger chopped
  • 2 Medium onions sliced
  • to garnish Fresh coriander sprig

Method

  1. Whisk together yogurt, gram flour, ginger-garlic-green chilli paste and salt and whisk together. Add turmeric powder and chilli powder and whisk again.
  2. Heat ghee in a deep non-stick pan. Add cinnamon, cloves, bay leaf, peppercorns, fenugreek seeds, cumin seeds, asafoetida, ginger and onions, mix and sauté till onions turn translucent.
  3. Add yogurt mixture and mix well. Add 2 cups water and mix again. Add salt, mix and bring to a boil.
  4. Garnish with coriander sprig and serve hot with steamed rice.
