Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Saeb Ki Burfi Recipe

  • Apples grated 4

  • Khoya 1/2

  • Ghee 1 tablespoon

  • Almonds chopped 6-8

  • Cashewnuts chopped 6-8

  • Pistachios chopped 6-8

  • Apple juice 1 cup

  • Sugar 3 tablespoons

  • Mawa (khoya) grated 1 cup

Method

Step 1

Grate apples with the skin and add lemon juice to it. Heat ghee in a non-stick pan.

Step 2

Drain water from the grated apples, add them to the pan and sauté on a high heat till fragrant.

Step 3

Grease a tray with ghee. Sprinkle the chopped almonds, cashew nuts and pistachios on it.

Step 4

Add apple juice, sugar to the pan and mix well. When the sugar dissolves and mixture thickens, add mawa and cook, stirring continuously.

Step 5

When the mixture begins to leave the sides of the pan, transfer the mixture onto the tray.

Step 6

Keep the tray in the refrigerator when the mixture cools down to room temperature. Once the burfi is set, cut into pieces and serve.
