Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Soyabean and Vegetable Star Crisps Recipe

  • Soyabean 1/2 cup

  • Vegetables boiled peeled and grated 2 small

  • Grated cabbage 1/4 cup

  • Grated carrot 1/4 cup

  • Green peas 1/4 cup

  • Refined flour 1/2 cup

  • Whole wheat flour 1/2 cup+ for dusting

  • Onion chopped 1 medium

  • Turmeric powder 1/4 teaspoon

  • Dried mango powder 1/2 teaspoon

  • Roasted cumin powder 1 teaspoon

  • Green chilli paste 2 teaspoons

  • Salt to taste

  • Oil for cooking

  • Fresh coriander sprigs for garnishing

  • Dollops of butter for serving

  • Raita

  • Fresh coriander sprigs 8-10

  • Onion chopped 1 small

  • Tomato chopped 1 small

  • Salt to taste

  • Yogurt 1 1/2 tablespoons


Step 1

Combine soyabean flour, refined flour, whole wheat flour, potatoes, onion, cabbage, carrot, green peas, turmeric powder, dried mango powder, cumin powder, green chilli paste and salt in a bowl. Add sufficient water and knead into a soft dough and set aside to rest for 5-10 minutes.

Step 2

Dust the worktop with some wheat flour. Roll out the dough into a large thin sheet. Cut out star shapes using a star-shaped cookie cutter.

Step 3

Heat little oil on a non-stick tawa. Place the star shaped cut outs on it and fry till crisp and golden from both the sides.

Step 4

To make raita, chop coriander sprigs and put in a bowl. Add onion, tomato, salt and yogurt and mix well.

Step 5

Place the star crisps on a serving plate, garnish with coriander sprigs and serve with raita and dollops of butter.
