Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Spicy Tomato And Coconut Soup Recipe

  • Tomatoes chopped 6 medium

  • Coconut scraped 1/2 cup

  • Oil 2 tablespoons

  • Garlic chopped 7-8 cloves

  • Onions chopped 2 medium

  • Ginger grated 1 1/2 inch piece

  • Salt to taste

  • White pepper powder to taste

  • Bay leaves 4

  • Vegetable stock 7 cups

  • Fresh cream 2 tablespoons

Method

Step 1

Heat oil and sauté garlic and onions for a few seconds. Add scraped coconut and stir fry for a minute. Add tomatoes and ginger. Stir in vegetable stock, salt, white pepper powder and bay leaves.

Step 2

Allow to simmer for fifteen-twenty minutes till the tomatoes are cooked and tender. Remove from heat and allow to cool.

Step 3

Blend to make a puree and strain. Place on heat and bring to a boil. Stir in cream and serve immediately
