Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Spinach Corn Rice Recipe

  • Spinach puree 3/4 cup

  • Basmati rice blanched 1/2 cup

  • Cooked basmati rice 3 cups

  • Oil 1 tablespoon

  • Onions diced 2 medium

  • Red capsicum 1/4 inch pieces 1 medium

  • Garlic 8-10 cloves

  • White sauce 1/2 cup

  • Salt to taste

  • Sesame seeds (til) toasted 2 tablespoons

Method

Step 1

Place the rice in individual bowls. Heat the oil in a non stick pan. Add the onions and red capsicum and toss till they are well glazed.

Step 2

Transfer into a bowl. Add garlic to the pan and sauté. Add spinach puree and corn and mix. Add white sauce and salt and mix well. Simmer for two minutes.

Step 3

Put a few ladleful of the spinach corn mixture over the rice in each bowl. Top it up with the glazed onions and capsicum.

Step 4

Sprinkle toasted sesame seeds and serve immediately.
