Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Spinach and Feta Clafouti Recipe

  • Spinach shredded 2 cups

  • Feta cheese cut into cubes 100 grams

  • Oil 2 teaspoons

  • Onions chopped ½ cup

  • Spring onion bulbs chopped ½ cup

  • Eggs 2

  • Salt to taste

  • Cornflour/ corn starch 2 tablespoons

  • Milk ½ cup

  • Crushed black peppercorns ½ teaspoon

  • Dill leaves (suva) ¼ cup

  • Spring onion greens chopped 2 tablespoons

  • Mozzarella cheese grated ½ cup


Step 1

Preheat oven to180º C.

Step 2

Heat oil in a non-stick pan. Add onions and spring onion bulbs, mix and sauté for 1 minute.

Step 3

Add spinach and sauté for 1 minute. Remove from heat and set aside.

Step 4

Break eggs into a bowl, add salt and cornflour and whisk well. Add milk and whisk to a smooth mixture.

Step 5

Add salt, crushed peppercorns and dill leaves to the cooked spinach mixture and mix well.

Step 6

Spread the spinach mixture in a baking dish and pour the egg mixture over it.Top with spring onion greens, mozzarella cheese and feta cheese.

Step 7

Place the dish in the preheated oven and bake for 10-12 minutes.

Step 8

Serve hot.
