By Sanjeev Kapoor 13 Apr 2016 in Recipes Course New Update Advertisment Main Ingredients Shiitake mushrooms, Water chestnuts Cuisine Fusion Course Main Course Vegetarian Prep Time 6-10 minutes Cook time 6-10 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Stir Fried Vegetables ½ cup Shiitake mushrooms dried, soaked 1 cup Water chestnuts tinned 6-7 Babycorn sliced 1 medium Red bell pepper cut into 1 inch pieces 1 medium Cucumber peeled, seeded and sliced for garnishing fried basil leaves 4-5 + 1 tablespoon Oil 2 teaspoons Vinegar 1 tablespoon Garlic chopped 1 medium Onion sliced 1 tablespoon Soy sauce to taste Salt 1 teaspoon brown sugar/jaggery to taste Crushed black peppercorns ½ cup Cashewnuts Method Discard stems of mushrooms and chop roughly. Halve water chestnuts. Heat oil in a non-stick wok. Add garlic to the wok and sauté till golden. Add onion and sauté till golden. Add baby corn and toss. Add halved water chestnuts, toss and cook for a minute. Add mushrooms and toss. Add red bell pepper and cucumber and toss. Add soy sauce, salt, brown sugar, crushed peppercorns and cashewnuts, toss and cook for a minute. Add salt and broken fried basil leaves and toss.
