Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Stuffed Capsicum Recipe

  • Mixed Capsicums 2 medium

  • Processed Cheese 2 medium

  • Potatoes boiled and grated 2 medium

  • Paneer (cottage cheese) 100 grams

  • Cheese grated 1/2 cup

  • Amchur powder 2 teaspoons

  • Raisins 12-15

  • Ginger chopped 1 inch piece

  • Fresh coriander leaves chopped 2 tablespoons

  • Cashewnut powder 2 tablespoons

  • Red chilli powder (deghi mirch) 1 1/2 teaspoons

  • Garam masala powder 1 teaspoon

  • Green chillies chopped 3-4

  • Salt to taste

  • Oil 2 tablespoons

Method

Step 1

Slice off the heads of green and red capsicums. Seed them and gently remove the white pith from inside them.

Step 2

Mix potatoes, cottage cheese, cheese, dried mango powder, raisins, ginger, cumin powder, coriander leaves, cashewnut powder, red chilli powder, garam masala powder, green chillies and salt in a bowl.

Step 3

Stuff this mixture in the both red and green capsicums and press it down firmly.

Step 4

Heat oil a grill pan and keep the stuffed capsicum upside down, and press gently with your hand.

Step 5

Grill them turning sides so that they cooked evenly all around. Cool, slice them into rings and serve.
