Sweet Potato Wedges

Ingredients list for Sweet Potato Wedges

  • 5-6 Sweet potatoes
  • 1/3 cup Olive oil
  • For Spice mix
  • 2 teaspoons Coriander seeds
  • to taste Sea salt
  • ½ teaspoon Paprika powder
  • 1½ teaspoons Dried oregano
  • to taste Crushed black peppercorns

Method

  1. Preheat oven to 200ºC.
  2. To make spice mix, dry roast coriander seeds till fragrant. Transfer into a mortar, add sea salt and coarsely grind with a pestle. Add paprika powder, oregano and crushed peppercorns and mix. Transfer into a bowl and set aside.
  3. Cut sweet potatoes into wedges along with skin and place them on a baking tray. Sprinkle spice mix over the wedges and drizzle olive oil on top. Mix.
  4. Put the tray in preheated oven and roast for 20-30 minutes.
  5. Serve hot.
