By Sanjeev Kapoor 14 Mar 2019 in Recipes Course New Update Main Ingredients Sweet potatoes, Olive oil Cuisine Fusion Course Snacks and Starters Prep Time 16-20 minutes Cook time 26-30 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Sweet Potato Wedges 5-6 Sweet potatoes 1/3 cup Olive oil For Spice mix 2 teaspoons Coriander seeds to taste Sea salt ½ teaspoon Paprika powder 1½ teaspoons Dried oregano to taste Crushed black peppercorns Method Preheat oven to 200ºC. To make spice mix, dry roast coriander seeds till fragrant. Transfer into a mortar, add sea salt and coarsely grind with a pestle. Add paprika powder, oregano and crushed peppercorns and mix. Transfer into a bowl and set aside. Cut sweet potatoes into wedges along with skin and place them on a baking tray. Sprinkle spice mix over the wedges and drizzle olive oil on top. Mix. Put the tray in preheated oven and roast for 20-30 minutes.
