Ingredients list for Tangy Thyme Chicken
- 2 Boneless chicken breasts
- 1 teaspoon Orange juice ½ cup +
- for garnishing Thyme sprigs 2,3 +
- to taste Salt
- 2 teaspoons Fennel seeds (saunf) roasted and crushed
- to taste Black pepper powder
- 1 tablespoon Butter
- 1 teaspoon Olive oil ½ tablespoon +
- 1 tablespoon Honey
- 1½ teaspoons Red chilli powder
- for garnishing Orange segments
Method
- Put ½ cup orange juice, salt, fennel seeds and pepper powder in a bowl. Add chicken, mix well and set aside to marinate for 1 hour.
- Preheat oven to 180ºC.
- Heat butter and ½ tablespoon olive oil in a non-stick pan. Place the marinated chicken in it and serr till light brown from both the sides.
- Put honey, pepper powder and fresh thyme in a bowl and mix well. Add red chilli powder and mix well. Add 1 teaspoon orange juice and 1 teaspoon olive oil and mix well.
- Place seared chicken on a baking tray, pour the honey mixture on top, put tray in preheated oven and bake for 15 minutes or till the chicken is fully cooked.
- Serve hot garnished with orange segments and thyme sprig.
