Ingredients
- 500 grams ridge gourd (turai), scraped and roughly chopped
- 1/2 cup split skinless green gram ,(dhuli moong dal) soaked for 30 minutes and drained
- 2 tablespoons ghee
- 1 inch ginger, grated
- Salt to taste
- 2 medium toamtoes, chopped
- Fresh coriander sprigs for garnish
Method
- Heat ghee in a non-stick pan, add ginger and sauté for a few seconds.
- Add ridge gourd and sauté well. Add salt, mix well, cover and cook for 2-3 minutes.
- Add tomatoes and green gram, mix well, cover and cook for 20-25 minutes. Adjust salt, if required.
- Garnish with coriander sprigs and serve hot.
