Also called by names like aubergine and eggplant, this purple hued fleshy vegetable is a versatile thing and fun to cook with. Dish-up a very traditional bharta with it, bake a lasagna with parmesan and eggplant or just fry it for a great accompaniment with dal-chawal, brinjal is versatile. To choose one without seeds, pick the lighter one with a smooth shiny skin.

Ingredients for Vangi Kape Recipe

  • Brinjal cut into thick slices 1 large

  • Salt to taste

  • Rice flour 1 cup

  • Semolina (rawa/suji) 1/2 cup

  • Turmeric powder 1/4 cup

  • Red chilli powder 1 teaspoon

  • Garam masala powder 1 teaspoon

  • Oil 3 tablespoons

Method

Step 1

Apply salt on the brinjals slices and set aside.

Step 2

Put rice flour, semolina, salt, turmeric powder, red chilli powder and garam masala powder and mix well.

Step 3

Coat the brinjals with the seasoned flour and dust the excess flour.

Step 4

Heat oil in a non-stick pan, add brinjals and shallow-fry for two-three minutes on each side or till they become golden. Drain on absorbent paper.

Step 5

Arrange them on a serving plate and serve hot.
