If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ranging in colours from orange, black, pink to red, yellow and white, this delicious vegetable is within the reach of rich and poor alike and is rightly called the universal root. The best role that this winter vegetable can play – chomp on one as it is an excellent snack!

Ingredients for Vegetables In Thai Red Curry Recipe

  • Carrot diagonally sliced 1 medium

  • Red Curry Paste diagonally sliced 10-12

  • Button mushrooms halved 10-12

  • French beans cut into 1/2 inch pieces 5-6

  • Red curry paste 1 tablespoon

  • Oil 2 tablespoons

  • Onions 2 medium

  • Tomato 1 medium

  • Salt to taste

  • Firm beancurd (tofu) 50 grams

  • Coconut milk 1 cup

  • Broccoli 5-6 florets

Method

Step 1

Heat oil in a non stick wok. Chop onions roughly and add. Add red curry paste and saute.

Step 2

Chop tomato and add. Add carrot, baby corns and mix. Add mushrooms and mix. Cover and cook 3-4 minutes.

Step 3

Add French beans, salt and mix. Cube tofu and add along with coconut milk and broccoli and mix. Cook for 2-3 minutes.

Step 4

Transfer into a serving bowl and serve hot with steamed rice.
