Ingredients list for Wafer Par Eeda

  • 100 grams Potato Wafers
  • 4 Eggs
  • 3 medium Onions
  • 1 medium Tomato
  • 2 tablespoons Oil
  • 1/2 teaspoon Cumin seeds
  • a few sprigs Green chillies
  • a few sprigs Fresh coriander leaves
  • to taste Salt

Method

  1. Chop onions and tomato.
    Heat oil in a non stick pan.
  2. Add cumin seeds and when it changes colour add onions and sauté.
    Lightly crush the wafers.
  3. Chop green chillies and add to the pan.
    Add tomato, mix and sauté for 3-4 minutes.
  4. Chop coriander leaves and add to the pan and mix.
    Add the wafers and mix. Sprinkle a little water.
  5. Break the eggs, one by one, and put into 4 different bowls.
    Divide the wafer masala into 4 portions on the pan itself.
  6. Make a well in the center of each portion and put an egg into it.
    Sprinkle salt, drizzle a little water around the edges.
  7. Cover and cook till the eggs are set.
    Gently lift each portion onto serving plates and serve immediately.
