By Sanjeev Kapoor 09 Jun 2016 in Recipes Course New Update Main Ingredients Lemon pickle, Paneer (cottage cheese) Cuisine Indian Course Rice Prep Time 6-10 minutes Cook time 6-10 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Achari Paneer Rice 2 tablespoons Lemon pickle 200 grams Paneer (cottage cheese) cut into small cubes 3 cups Rice 1 tablespoon Oil 1 teaspoon Cumin seeds 2 Bay leaves 7-8 Black peppercorns to taste Salt ½ medium Green capsicum finely chopped ½ medium Red capsicum finely chopped ½ medium Yellow capsicum finely chopped for garnishing Fresh coriander sprigs Method Heat oil in a non-stick pan. Add cumin seeds and sauté for half a minute. Add bay leaves and peppercorns and mix. Add lemon pickle, mix and sauté. Add salt, rice, green, red, yellow capsicums and cottage cheese cubes and toss well. Cover and cook on low heat for 2-3 minutes.
