Ingredients list for Anda & Palak Curry

  • 5 Eggs
  • 1 cup Spinach puree
  • 2 tablespoons Oil
  • 1/2 teaspoon Cumin seeds
  • 1/2 cup Onions , chopped
  • 1 teaspoon Garlic , grated
  • 2 Green chillies , finely chopped
  • 1/4 teaspoon Turmeric powder
  • 1 tablespoon Gram flour (besan)
  • 1/2 cup Yogurt
  • to taste Salt
  • 1/2 teaspoon Garam masala powder
  • 1/4 cup Cream

Method

  1. Boil sufficient water in a deep pan, add eggs, cover and cook for 10-12 minutes or till they are hard boiled. Drain, cool and peel them.
  2. Meanwhile heat oil in a non-stick pan, add cumin seeds and when their colour changes, add onions, mix and saute.
  3. Add garlic, mix and saute till raw smells disappears. Add green chillies and turmeric powder, mix and saute for 1 minute.
  4. Add gram flour, mix and saute till fragrant. Add yogurt and mix and cook for 2 minutes. Add spinach puree and 1 cup water and mix well. Cover and cook for 2-3 minutes.
  5. Add salt and garam masala powder and mix well. Cover and cook for 2-3 minutes more.
  6. Add the eggs and cream and mix.
  7. Halve the remaining egg vertically and cut one half into 3 vertical slices.
  8. Transfer the curry into a serving bowl, garnish with egg slices and serve hot.
