Ingredients list for Anda Chilli - SK Khazana

  • 6-8 Eggs hard boiled
  • 3-4 Green chillies slit
  • 2-3 Fresh red chillies slit
  • 1/4 cup Corn flour
  • 1/2 cup Refined flour
  • to taste Crushed black pepper corns
  • to taste Salt
  • + to deep fry Oil 1 tablespoon
  • 1 tablespoon Garlic finely chopped
  • 1 inch Ginger finely chopped
  • 1 small Onion diced and layers separated
  • 1 small Green capsicum diced
  • 1 small Yellow capsicum diced
  • 1 small Red capsicum diced
  • 1 tablespoon Red chilli sauce
  • 1 tablespoon Oyster sauce
  • 2 tablespoons Spring onion greens chopped
  • for garnish Spring onion green curls

Method

  1. Take corn flour in a bowl, add refined flour, crushed black peppercorns, salt and ½ cup water and mix till a smooth batter is formed.
  2. Heat sufficient oil in a kadai.
  3. Dip each egg halves in the batter and slide into the hot oil. Deep fry the eggs till golden and crisp. Drain on absorbent paper.
  4. To make the sauce, heat oil in a non-stick pan. Add garlic, ginger, green chillies and fresh red chillies and saute for 1-2 minutes.
  5. Add onion, green capsicum, yellow capsicum and red capsicum and mix and saute for 1-2 minutes on high heat.
  6. Add red chilli sauce and oyster sauce and mix well. Pour ¼ cup water, mix and cook for 1-2 minutes.
  7. Add fried eggs and adjust salt and mix till each egg is coated with the sauce. Add spring onion greens, mix and take the pan off the heat.
  8. Transfer anda chilli in a serving bowl and garnish with spring onion green curls and serve hot.
