Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Balsamic Garlic Grilled Mushroom Skewers-SK Khazan Recipe

  • Button mushrooms 10-12

  • Balsamic vinegar 2 tablespoons

  • Garlic finely chopped 1 tablespoon

  • Mixed capsicum cubes 1/2 cup

  • Fresh thyme 1 teaspoon

  • Soy sauce 1 tablespoon

  • Olive oil 2 tablespoons

  • Fresh coriander sprigs for garnish

  • Onion rings to serve

  • Lemon slices to serve


Step 1

Mix together mixed capsicums, mushrooms, garlic, thyme, balsamic vinegar and soy sauce in a bowl. Set aside to marinate for 10-15 minutes.

Step 2

Skewer the mushrooms and mixed capsicums alternately onto satay sticks.

Step 3

Heat olive oil in a non-stick grill pam. Keep the skewers in the pan and grill, rotating the skewers, till grill marks appear on the mushrooms and capsicums.

Step 4

Garnish with coriander sprig and serve immediately with onion rings and lemon slices.
