Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Batata Matki Ussal Recipe

  • Potatoes ,quartered vertically and sliced 2 medium

  • Matki beans , sprouted 1½ cups

  • Onion 1 medium

  • Oil 2 tablespoons

  • Asafoetida 1/4 teaspoon

  • Mustard seeds 1/2 teaspoon

  • Cumin seeds 1 teaspoon

  • Curry leaves 8-10

  • Turmeric powder 1/4 teaspoon

  • Salt red to taste

  • Red chilli powder 1 teaspoon

  • Goda masala powder 1 /1 2 teaspoons

  • Sugar 1 teaspoon

  • Fresh coriander sprigs a few

  • Coconut , scraped 2 tablespoons

Method

Step 1

Chop onion.

Step 2

Heat oil in a non-stick pan, add asafoetida, mustard seeds, cumin seeds, curry leaves and onion, mix and sauté.

Step 3

Add potatoes and mix. Add turmeric powder and salt and mix well and saute for 1 minute. Add matki and 1 cup water and mix well.

Step 4

Add red chilli powder, goda masala and sugar and mix well. Cover and cook till both potatoes and matki are done.

Step 5

Chop a few sprigs of fresh coriander leaves.

Step 6

When the ussal is almost done, add most of the coriander leaves and coconut and mix well.

Step 7

Transfer the ussal into a serving plate, garnish with coconut and remaining coriander leaves and serve hot.
