By Sanjeev Kapoor 15 Jan 2018 in Recipes Course New Update Main Ingredients Baked beans, Carrot Cuisine Fusion Course Rice Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Bean Vegetable Rice 1 cup Baked beans 1 medium Carrot peeled and cut into ½ inch cubes 1 medium Green capsicum cut into½ inch pieces 6-8 Button mushrooms sliced 3 cups Cooked rice 2 tablespoons Butter 1 tablespoon Garlic chopped 1 medium Onion finely chopped to taste Salt ½ teaspoon Cumin powder 1½ teaspoons Red chilli powder For topping Processed cheese grated, ¼ cup + 2 Pickled jalapenos sliced to serve Salad mixed vegetable Method Heat butter in a non-stick pan. Add garlic and sauté till golden. Add onion and sauté till golden. Add carrot and sauté for 1 minute. Add 2-3 tablespoons water, mix, cover and cook on low heat for 2 minutes. Add capsicum and mushrooms, mix and cook for 1-2 minutes. Add baked beans and mix well. Add salt, cumin powder and chilli powder, mix and cook for 1 minute. Add cooked rice, lightly mix and cook on low heat for 5 minutes. Add cheese and mix. Add jalapenos and mix well.
