Brinjal Parmesan Bake Brinjal roundels, tomato sauce and parmesan cheese powder layered one over the other and baked. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 10 Jun 2016 in Recipes Course New Update Main Ingredients Brinjal, Parmesan cheese powder Cuisine Fusion Course Snacks and Starters Prep Time 21-25 minutes Cook time 16-20 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Brinjal Parmesan Bake large Brinjal For topping Parmesan cheese powder 6-8 medium Tomatoes blanched, peeled, seeded and roughly chopped 2 teaspoons Oil 2 small Onions Finely chopped 1 tablespoon Garlic Finely chopped 1 teaspoon Sugar to taste Crushed black peppercorns to taste Salt 1 teaspoon Paprika 2 teaspoons Butter 5-6 Fresh basil leaves Method Preheat oven at 180ºC. Puree tomatoes finely in a blender and transfer into a bowl. Heat 1½ teaspoons oil in a non-stick pan. Add onions and sauté for a minute. Add garlic, mix and sauté for a minute. Add pureed tomatoes, mix well and cook till the oil separates. Add sugar and mix well. Add crushed peppercorns and salt, mix well and simmer for a minute. Remove from heat. Slice brinjal into ½ inch roundels and place in a bowl. Add salt, crushed peppercorns and paprika and mix well. Heat butter and remaining oil in a non-stick grill pan. Place brinjal slices on it and grill till grill marks appear on both sides. Place a layer of grilled brinjal slices in a glass baking dish, spread some prepared tomato sauce and top with lots of Parmesan cheese powder. Repeat the process till all the ingredients are used up. Garnish with torn basil leaves. Put the dish in the preheated oven and bake for 5-10 minutes or till the cheese melts.
