Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Handi-SK Khazana Recipe

  • Chicken on the bone cut into 16 pieces on the bone 750 grams

  • Oil 3 tablespoons

  • Cinnamon 1 inch

  • Green cardamom 4

  • Black cardamom 2

  • Cumin seeds 1 teaspoon

  • Ginger finely chopped 1 teaspoon

  • Green chillies finely chopped 2

  • Large onions sliced 2

  • Ginger-garlic paste 1 tablespoon

  • Salt for basting

  • Fresh tomato puree 1 cup

  • Turmeric powder 1/4 teaspoon

  • Red chilli powder 2 teaspoons

  • Coriander powder 1 1/2 teaspoons

  • Garam masala powder 1 teaspoon

  • Green cardamom powder 1 teaspoon

  • Fried onions 1/2 cup + for garnish

  • Fresh coriander leaves chopped 1 tablespo for garnish

Method

Step 1

Heat the oil in a deep non-stick pan. Add cinnamon, green cardamoms, black cardamoms and cumin seeds, mix and sauté well.

Step 2

Add ginger and green chillies, mix and sauté for a minute. Add onions, mix well and sauté till they turn translucent.

Step 3

Add ginger-garlic paste and mix well. Add salt, mix, cover and cook till the onions turn golden brown.

Step 4

Add tomato puree, mix and saute for 2 minutes. Add turmeric powder, chilli powder, coriander powder, garam masala powder and cardamom powder, mix well, cover and cook till the oil separates.

Step 5

Add sufficient water, mix and bring to a boil. Add chicken pieces, fried onions and coriander leaves, mix well, cover and cook till fully done.

Step 6

Garnish with some fried onions and coriander leaves and serve hot.
