When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Kali Mirch Recipe

  • Chicken drumsticks 4

  • Black peppercorns (kali mirch) crushed 1 teaspoon for garnish

  • Ghee 2 tablespoons

  • Black cardamom 1

  • Green cardamoms 2

  • Cinnamon 1 inch

  • Cloves 3

  • Boiled onion paste 1 cup

  • Green chilli paste 2 teaspoons

  • Yogurt 1/2 cup

  • Mawa grated 3/4 cup

  • Kaju-magaz paste 1 tablespoon

  • Salt to taste

  • Green cardamom powder 1 pinch

  • Dried fenugreek powder 1/4 teaspoon

  • Fresh cream 2 tablespo for garnish

  • Chaat masala 1/2 teaspoon

  • Ginger strips for garnish

Method

Step 1

Heat ghee in a non-stick pan, add black cardamom, green cardamom, cinnamon, cloves and onion paste, mix well and saute for 2 minutes.

Step 2

Add green chilli paste and mix well. Add chicken drumsticks, mix and sear on high heat for 2-3 minutes. Add yogurt, mix well and saute for 2 minutes.

Step 3

Add 1½ cups water, mix well, cover and cook till the chicken is ¾ done.

Step 4

Add mawa, kaju-magaz paste, salt, green cardamom powder and dried fenugreek powder and mix well. Add crushed black peppercorns, mix well, cover and cook till chicken is completely done.

Step 5

Add fresh cream and chaat masala and mix well and switch off the heat.

Step 6

Transfer into a serving bowl, garnish with ginger strips, fresh cream and crushed black peppercorns and serve hot.
