Ingredients list for Chicken Kali Mirch

  • 4 Chicken drumsticks
  • 1 teaspoon for garnish Black peppercorns (kali mirch) crushed
  • 2 tablespoons Ghee
  • 1 Black cardamom
  • 2 Green cardamoms
  • 1 inch Cinnamon
  • 3 Cloves
  • 1 cup Boiled onion paste
  • 2 teaspoons Green chilli paste
  • 1/2 cup Yogurt
  • 3/4 cup Mawa grated
  • 1 tablespoon Kaju-magaz paste
  • to taste Salt
  • 1 pinch Green cardamom powder
  • 1/4 teaspoon Dried fenugreek powder
  • 2 tablespo for garnish Fresh cream
  • 1/2 teaspoon Chaat masala
  • for garnish Ginger strips

Method

  1. Heat ghee in a non-stick pan, add black cardamom, green cardamom, cinnamon, cloves and onion paste, mix well and saute for 2 minutes.
  2. Add green chilli paste and mix well. Add chicken drumsticks, mix and sear on high heat for 2-3 minutes. Add yogurt, mix well and saute for 2 minutes.
  3. Add 1½ cups water, mix well, cover and cook till the chicken is ¾ done.
  4. Add mawa, kaju-magaz paste, salt, green cardamom powder and dried fenugreek powder and mix well. Add crushed black peppercorns, mix well, cover and cook till chicken is completely done.
  5. Add fresh cream and chaat masala and mix well and switch off the heat.
  6. Transfer into a serving bowl, garnish with ginger strips, fresh cream and crushed black peppercorns and serve hot.
