Ingredients list for Chicken and Prawn Rice with Peppers

  • 250 grams Boneless chicken cut into 1 inch pieces
  • 8-10 medium Prawns (kolambi/jhinga) shelled, deveined
  • 1½ cups Rice soaked for 30 minutes, drained
  • 1 medium Yellow capsicum diced
  • 1 medium Green capsicum diced
  • 1 medium Red capsicum diced
  • 1 tablespoon Butter
  • ½ tablespoon Oil
  • 1 tablespoon Garlic chopped
  • 1 medium Onion finely chopped
  • 1 medium Tomato blanched, peeled, finely chopped
  • to taste Salt
  • 1 teaspoon Paprika
  • 6-8 florets Broccoli
  • 3-4 cups Chicken stock

Method

  1. Heat butter and oil in a deep non-stick pan. Add garlic and sauté for 30 seconds.
  2. Add onion and sauté till translucent. Add tomato and sauté for 1 minute. Add salt and paprika and mix well.
  3. Add chicken, mix and cook for 1 minute. Add rice and mix well. Add yellow capsicum, green capsicum, red capsicum, broccoli and chicken stock, mix and bring to a boil.
  4. Add prawns, mix and cover and cook till rice is done.
  5. Serve hot.
