Ingredients list for Chinese Style Vegetable Claypot Rice

  • 1 1/2 cups Short grain rice , soaked for 1 hour and drained
  • 2 tablespoons Olive oil
  • 2 medium Onions , peeled
  • 2 medium Carrots
  • 1 1/2 tablespoons Ginger , grated
  • 1 1/2 tablespoons Garlic , grated
  • 1 cup Button mushrooms , halved
  • to taste Salt
  • 1 teaspoon Soy sauce
  • 3 cups Vegetable stock
  • 1/2 teaspoon Black pepper powder
  • 1 teaspoon Sesame oil (til oil)

Method

  1. Heat olive oil in a deep pan. Roughly chop onions and add and sauté.
  2. Cut carrots into medium sized pieces and add. Add ginger and garlic, mix well and continue to sauté.
  3. Preheat oven to 160° C.
  4. Add button mushrooms, mix well and sauté for 2 minutes. Add salt, soy sauce and vegetable stock and mix well. Add rice and pepper powder and mix. Cover and cook on low heat till half done.
  5. Transfer the mixture into a claypot. Add sesame oil and cover, keep the clay pot in the preheated oven and cook for 25-30 minutes or till the rice is completely cooked. Let it remain in the oven for some time.
  6. If you want to cook in the Microwave oven, cook at HIGH for 6-7 minutes and let it remain in the oven for some time. Ensure that the mixture remains moist.
  7. Transfer onto a serving platter and serve hot.
