How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Chooda Matar Recipe

  • Pressed rice (poha) 1 1/2 cups

  • Green peas (matar) boiled 1/2 cup

  • Ghee 2 tablespoons

  • Bay leaves 2

  • Cumin seeds 1 teaspoon

  • Green chillies finely chopped 1-2

  • Ginger finely chopped 1 teaspoon

  • Cahewnuts halved 12-14

  • Salt to taste

  • Garam masala powder 1 teaspoon

  • Nylon sev to sprinkle

Method

Step 1

Soak pressed rice in sufficient water. Squeeze and set aside.

Step 2

Heat ghee in a non-stick pan. Add bay leaves and cumin seeds, mix and sauté till the seeds change colour.

Step 3

Add green chillies and ginger, mix and sauté for a minute. Add cashewnuts and mix well.

Step 4

Add green peas, mix and cook for a minute. Add salt and toss well. Add garam masala powder and mix well.

Step 5

Discard bay leaves, add pressed rice, mix well and let it get heated through.

Step 6

Sprinkle sev on top and serve hot.
