By Sanjeev Kapoor 22 Feb 2021 in Recipes Course New Update Main Ingredients Basmati rice, Ghee Cuisine Indian Course Rice Prep Time 1-1.30 hour Cook time 31-40 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Chutney Vegetable Pulao - SK Khazana 1 1/2 cups Basmati rice soaked and drained 2 teaspoons Ghee 2 Bay leaves 3-4 Cloves 5-6 Black peppercorns 2 Medium onions sliced 1 Medium carrot chopped 5-6 French beans chopped 7-8 Cauliflower florets 1/4 cup Green peas blanched 1/2 tablespoon Ginger-garlic paste to serve Raita Green chutney 2 cups Fresh coriander leaves washed and chopped 32 Green chillies 3-4 Garlic cloves 2 tablespoons Fresh coconut scraped 1 tablespoon Lemon juice to taste Salt Method Put coriander leaves, green chillies, garlic, scraped coconut, lemon juice and salt in a blender jar, add sufficient water and blend to a fine paste. Heat ghee in a deep non-stick pan, add bay leaves, cloves, black peppercorns and onions, mix and sauté till onions turn golden brown. Add carrot, French beans, cauliflower and green peas, mix well. Add ginger-garlic paste and sauté for a minute. Add the rice and sauté well. Add the chutney, salt and 3 cups water and mix well.
