Ingredients list for Chutney Vegetable Pulao - SK Khazana

  • 1 1/2 cups Basmati rice soaked and drained
  • 2 teaspoons Ghee
  • 2 Bay leaves
  • 3-4 Cloves
  • 5-6 Black peppercorns
  • 2 Medium onions sliced
  • 1 Medium carrot chopped
  • 5-6 French beans chopped
  • 7-8 Cauliflower florets
  • 1/4 cup Green peas blanched
  • 1/2 tablespoon Ginger-garlic paste
  • to serve Raita
  • Green chutney
  • 2 cups Fresh coriander leaves washed and chopped
  • 32 Green chillies
  • 3-4 Garlic cloves
  • 2 tablespoons Fresh coconut scraped
  • 1 tablespoon Lemon juice
  • to taste Salt

Method

  1. Put coriander leaves, green chillies, garlic, scraped coconut, lemon juice and salt in a blender jar, add sufficient water and blend to a fine paste.
  2. Heat ghee in a deep non-stick pan, add bay leaves, cloves, black peppercorns and onions, mix and sauté till onions turn golden brown.
  3. Add carrot, French beans, cauliflower and green peas, mix well. Add ginger-garlic paste and sauté for a minute.
  4. Add the rice and sauté well. Add the chutney, salt and 3 cups water and mix well.
  5. Cover and cook for 12-15 minutes.
