By Sanjeev Kapoor 18 Mar 2021 in Recipes Course New Update Main Ingredients Fresh coconut, Coconut milk Cuisine South Indian Course Rice Prep Time 16-20 minutes Cook time 21-25 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Coconut Rice 3/4 cup Fresh coconut scraped 1/2 cup Coconut milk 1 1/2 cups Basmati rice soaked for 20 minutes and drained 3 tablespoons Ghee 1 teaspoon Mustard seeds 1/2 teaspoon Cumin seeds 10-12 Curry leaves 2-3 Dried red chillies broken 7-8 Cashewnuts halved 1 Medium carrot finely chopped 1/2 teaspoon Red chilli powder 1/2 cup Green peas to taste Salt 1 tablespo to garnish Fresh coriander leaves chopped Method Heat ghee in a deep non-stick pan, add mustard seeds and cumin seeds and let the seeds splutter. Add curry leaves and red chillies, mix and sauté for a minute. Add cashewnuts and carrot, mix and sauté for 2 minutes. Add ½ cup coconut and mix. Add red chilli powder and mix. Add rice and 3 cups water and mix. Add green peas, salt and coconut milk, mix, cover and cook till fully done. Add coriander leaves and gently mix well.
