Dhaba Style Aloo Sabzi

Dhaba Style Aloo Sabzi

Ingredients 

  • 3 medium potatoes, unpeeled, parboiled and cut into 1 inch pieces
  • 5 tablespoons mustard oil
  • 3 small onions, quartered and layers separated
  • 4-5 green chillies
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon asafoetida
  • 2 bay leaves
  • 2 half inch cinnamon sticks
  • 2-4 cloves
  • 1 dried red chilli
  • 1 medium onion, finely chopped
  • 5-6 garlic cloves, chopped
  • 1 medium tomato, finely chopped
  • Salt to taste
  • 1/2 teaspoon turmeric powder
  • 1/2 tablespoon coriander powder
  • 1 1/2 teaspoon red chilli powder
  • 1 tablespoon chopped fresh coriander leaves 

Method

  1. Heat 3 tbsps mustard oil in a non-stick pan till it begins to smoke. Add potatoes and sauté for 2 minutes.
  2. Add quartered onions and green chillies, mix and sauté for 2-3 minutes. Transfer them into a bowl.
  3. Heat remaining mustard oil in the same non-stick pan till it begins to smoke. Add cumin seeds, mustard seeds, asafoetida, bay leaf, cinnamon stick, cloves and dried red chilli, mix and sauté till fragrant.
  4. Add chopped onion and garlic, mix well and saute till golden brown. Add tomato, mix and sauté till pulpy.
  5. Add salt,Turmeric Powder, coriander powder and red chilli powder, mix well and saute for 1 minute. Add ¼ cup water, mix well, cover and cook for 3-4 minutes.
  6. Add the potato-onion mixture, mix and cook for 1 minute. Add coriander leaves and mix well. Cover and cook for 1-2 minutes.
  7. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
